Christmas Cookies


These are some of my very favorites. They scream Christmas to me. They wont win any easy bake titles or any glamour or beauty contest, but they make up for it in yumminess. Our house growing up was always filled with so many wonderful, beautiful cookies and treats that I adore, but these are the ones that just mean it's Christmas. They were my Grandpa's favorite and his mom would make them for him every year for his birthday instead of cake. They have been around in our family forever.

Filled Cookies:

1 cup sugar
1/2 cup butter
1 egg, well beaten
1/2 cup milk
3 1/2 cups flour
2 tsp. baking powder

Cream together butter and sugar. Add remaining and stir together. Roll very thin, cut and put a tsp. of filling on bottom half. Top with second thin cookie and press edges together.

3/4 cup sugar
1 Tbs flour
1 cup hot water
1 1/2 cups ground raisins
Cook and let cool. (This is what the recipe reads. Cracks me up. No fussing with the details.)

I usually cook it about 30 mionutes on medium heat in a large stock pot. A 2 lb bag of raisins yeilds about the right amount of ground raisins with the hot water. My Cuisinart works perfect for this process.

Bake @ 400 degrees for 10-12 minutes.
